Our Spelt Fusilli are made with stoneground wholegrain spelt so that none of the amazing nutritional and health benefits of this grain are lost in the milling process. Not to degenerate any of the vitamins, we produce and dry our pasta at low temperature. The same bouquet we enjoy when mixing spelt flour with water we recognise in our finished dry pasta as a sign that nothing is lost in our artisan process. Spelt tastes of toasted almond, light brown walnut, toffee, caramel.

    Britain offers an abundance of excellent grains, and it felt like a missed opportunity not to have British-made dry pasta. So, in 2012, we set out to change that and create one. It took us years refining our methods until we officially launched Carleschi at Borough Market in 2019. We have since kept expanding our range, regularly adding new shapes and grains.

    But our story isn’t about one person—it’s the result of many hands. From the farmers who grow our grains to the millers who stone-grind them, and the artisans who craft each batch, Carleschi is a collective effort of passionate people creating the best British pasta possible.
