Dating back to the fourteenth century, it is said that these sweets were introduced by the knight Ricciardetto Della Gherardesca upon his return from the crusades. Initially offered in his castle, they soon became a Sienese confectionery tradition.
Ricciarelli are produced according to the original recipe with a dough made of almonds, egg whites, sugar and honey.
We make sure that our ingredients are always fresh and come from the best farms. The almonds we use are of the best quality and are hand-selected to avoid any possible impurities. They are of Italian origin, mainly from Puglia, soft, tasty and rich in essential oils that characterize their scent.
Each individual ricciarello is prepared, manually shaped and sprinkled with sugar. When the ricciarello has obtained the shape indicated by the production specification, it is ready to be baked. Once cooled, the sweets are packaged in decorated trays or boxes of various sizes. Ricciarello PGI is a product with an unmistakable sweet flavor with the characteristic bitter aftertaste given by a small quantity of expertly balanced bitter almonds and a soft and non-crumbly consistency.

To make its sweets, the Fabbrica del Panforte draws from the past the original recipes of the Sienese confectionery tradition, inherited from the Master Panforte makers.
